Hello fellow students and chefs,

Kim Somauroo Advice on using isomalt for caramelised celery

I have to make a lot of caramelised celery as a garnish that will last a few days. I've heard I could use isomalt. Does anyone have any advice on how to use it and where I could get it from please? Many thanks.

Amanda Smith A little knowledge is a dangerous thing.

Living in Spain I have come across some interesting fruit on our Finca (farm). It is important not to let this stuff fall on the floor for the chickens as it makes them ill.  I had a go at Nispero Jam. English name Japanese medlar. I had no recipe for it in in any of my English recipe books and no internet connection so I made it up! The fruit has between 1 and 5 stones in and is fleshy like a peach but not as fibrous. Dom O FSA Advice - do not eat alfalfa, bean sprouts and fenugreek raw

There seems to have been a lot of conflicting information regarding the Europe wide e.coli outbreak, but here is the new FSA advice to consumers on the back of the latest investigation linking the outbreaks to fenugreek seeds originating from Egypt.

Food Standards Agency advice

  • Do not eat sprouted seeds such as alfalfa, mung beans (or bean sprouts) and fenugreek raw
