Hi Kim, better late than never! i would suggest Chocolate Desserts by Pierre Herme or any of his books. Gordon Ramsey's Just Desserts is another inspiring read.

Hey guy's !!!!

 

Just a quick blog to find out what you guy's actually get up to after completing a course at the cookery school?

it would be great to get some feedback after reading Steffan's blog post ( 'First job since leaving Ashburton in April' ) and getting inspired!!

so whether you have been hosting dinner parties, private dining, found a job in the catering…

Hi Jo,

 Charlie and I had a pretty decent bash at the breakfast yesterday ( we have the 8 year old balsamic !!) before St Paul's carnival in Bristol. We have also both done the baked trout and have a few jars of the tomato sauce in the fridge waiting to be deployed. Thanks for the chat the other day re the Diploma course for Charlie, I have now booked him on it. He is very excited !!

Also...I thought I'd let you know. I have acquired my first Chef job since leaving Ashburton :).

I am now in Fort Lauderdale on a 50M yacht called Encore and working in my first ever head chef position on board.......scary but exciting!! Thank goodness I did my courses with you guys, I have already pulled out quite a few of your recipes for the guests and they have been loving it!! Especially the gravalax in greek yogurt!! Two large gins before stew, white wine or vermouth in it, wash down with too much red wine and follow it with something nice and citrussy. Then some choc. My (until now) secret recipe for instant heartburn!! Free to you.
