I have two interviews for the Commis Chef position at 5 star hotels. One of them is the Mandarin Oriental. I've never done a job interview before. What should I expect from them?

Peligoni is looking for chefs for our dynamic and busy kitchen. We aim to provide a diverse menu sourcing local products and using local influence for our stunning restaurant
Our kitchen is made up of 8 – 10 chefs, from those with commercial kitchen experience to a season chalet cooking. We aim to provide the opportunity for all levels of chefs to improve their skills and learn off those more experienced than themselves. An enthusiastic and passionate approach to food and service is imperative.
We are trying to push the standards of food higher each year and are always open to new ideas and individual attributes.

Background
Forrest Hills is a small, family-run, diversified farm. It offers facilities for meetings, training and conferences, as well as for playing golf and fly fishing. We are in a beautiful location, close to Lancaster University and the Forest of Bowland hills. We have tried to develop Forrest Hills in a way that contributes positively to the environment whilst at the same time creating a vibrant, innovative and successful rural business.
In 2011 we opened a stunning new building which has two additional meeting rooms and a café with lakeside terracing. We have incorporated trees, stone and clay from our site into the building as well as straw bale walls, a locally-made waterwheel and a wood-fired bread oven. We use our own managed woodlands for fuel; produce from our hens, bees and vegetable garden and meat and dairy products from just a few miles away in our menus; and process most of our waste through on-site composting and a reed bed.
We work hard and put a lot of care and attention into looking after our customers and our environment. We are now looking for suitable staff who are able to do the same in our new café and kitchen.

We have taken this property for 2 weeks which happen to coincide with the first 2 weeks of the Olympics, to have a holiday with our children and grandchildren, and a few close family friends.
The Job
Buy the food needed. We shall provide the cash needed for this. Prepare and serve meals, clear up after meals. We shall be driving and will take a starter pack of dry foods with us. There is locally a town with a supermarket (Villefranche de Lauragais 5 km), several villages, and street markets.
Meals
Breakfast mainly continental; there may be requests for cooked. Lunch: ingredients for a picnic put out for people to make their own, or eat if they stay at the Chateau (bread, cheese, fresh fruit, pate, quiche, etc.). Main meal in the evening where as many children as possible will join the adults, so not too late. 3 courses with wine and coffee/tea
Accommodation
Cooks would have own shared room, and bathroom shared with others
Equipment
It appears as if the kitchen is fully equipped but any specific questions over eg knives, food mixer etc, would be taken up with the local agent
Facilities
The Chateau is in 10 acres of grounds, and has a swimming pool and a tennis court. With time available in the middle of the day we would hope that the cooks could enjoy visiting the area
Remuneration
Neg.
However the transport is organised for the cooks to arrive at the Chateau, we would be responsible for their transport costs. Dependant on whether they have they have their own transport, the choices seem to lie between driving, and flying to either Toulouse (better served) or Carcassonne, and hiring a car.
